Gujiya is Bihar and Jharkhand's most cherished festival sweet — a delicate half-moon pastry cradling a rich, roasted khoya filling studded with dry fruits. No Holi celebration in a Bihari home is complete without a large plate of freshly made Gujiya. It is the sweet that signals celebration, the one guests reach for first, and the one children fight over last.
What separates a great Gujiya from an ordinary one is the filling. Ours is made with slow-roasted khoya (mawa), coarsely roasted suji (semolina), hand-chopped cashews, raisins, and freshly grated coconut — all bound with cardamom and a careful measure of sugar. The outer shell is pressed paper-thin from refined dough and hand-sealed at the edges before being fried in pure desi ghee to a perfect golden crunch.
The most common mistake in commercial Gujiya is a thin, under-filled shell. We fill ours generously — when you bite in, the filling should be the star. That is how it has always been done at home. This is also called pedakiya in Bihar, and it is a sweet that is made with love, patience, and care — the way only a Bihari grandmother can.

You choose the base of the filling. Khoya (mawa) is slow-roasted in our kitchen and is the pre-selected type. Suji is semolina, roasted coarsely so that it gives the filling a little texture. Everything else is the same in both: the shell, the dry fruits and the frying.
