The Story
Mathri is the snack that is always in the tin. When guests arrive, when the chai is poured, when a long train journey is planned, a handful of mathri is what Bihari homes reach for. Flaky, layered and crisp, it is a simple thing — flour, fat, salt and a generous pinch of ajwain — made well.
The magic is in the dough. It is kneaded firm, rested, rolled out and pricked so it fries evenly, then cooked slow and gentle until every layer turns a light golden brown. Rushing it makes mathri hard; patience makes it flaky and crumbly at the edges. We make ours the way it is made at home, in small batches.
Choose Normal for the classic ajwain-and-salt taste, or Masala for a little extra warmth from kasuri methi, red chilli and black pepper. Either way, it is best with a hot cup of chai and good company.
