Our Signature Bihari Namkeen is a carefully balanced mix of savory bites — crispy lentil crisps, nimki (the diamond-cut savory pastry that is a Bihar staple), light sev, and roasted peanuts — all tossed in a hand-ground spice blend of ajwain, cumin, black pepper, and a whisper of asafoetida (hing). No ready-made masala packets. No shortcuts. Just the same spice mix that every Bihari grandmother made from scratch.
Nimki, in particular, is something special — a thin, crispy, slightly flaky pastry that is a beloved snack across Bihar and Jharkhand. Finding nimki made at home, without preservatives, is rare. We make it the traditional way: hand-cut dough, fried slow and even until it shatters at the touch.

You choose the flour for the nimki dough. Atta is whole wheat flour and maida is refined flour; the rest of the mix is the same for both, and maida is the pre-selected type. Both versions are fried in refined oil.
