The Story

Every summer in Bihar, when the raw mango season arrives, the kitchen transforms. The best raw mangoes — firm, sour, and fragrant — are hand-cut into thick pieces and laid out to sun-dry for several days. This drying is not just practical (it removes moisture to prevent spoilage) — it concentrates the mango's sourness into an intensity that no shortcut can replicate.

Once dried, the pieces are massaged with freshly ground spices — fenugreek seeds (methi), mustard seeds (rai and kalonji), turmeric (haldi), and red chilli — and then submerged in cold-pressed mustard oil (kachi ghani). Not heated oil, not refined oil. Kachi ghani, the traditional first-press oil that retains all its natural pungency and protective properties.

No vinegar. No citric acid. No preservatives. The same natural acidity of the raw mango and the antibacterial properties of mustard oil preserve the pickle the way they have for centuries. A well-made aam ka achaar only gets better after a few weeks as the flavours mature and deepen. One jar will last you a full year — if you can resist finishing it sooner.
